PRODUCT DEVELOPMENT Chop with different texture the lean and the bacon both separately, pass to the kneader along with the other ingredients. It is stuffed into NOT edible casing. It will remain in the chamber for about 21 days. Later it goes to the dryer.

Aromatic herbs and different spices (paprika, pepper, garlic, rosemary, thyme, cloves, ginger, nutmeg, etc.) that is introduced ("sausage") in the skin of casings.
